  • 1 can cooked chicken
  • 14 oz can diced tomatoes (or chop-chop some)
  • 1 red bell pepper diced
  • 1/2 onion diced
  • 2 cloves garlic diced
  • 1 bunch cilantro diced
  • 1 package taco seasoning
  • 1 sm can corn, drained
  • 8-10 corn tortillas
  • Shredded cheese
  • Sour cream
  • other toppings like diced avocado, lettuce, etc
Saute onion, bell pepper, garlic. Add chicken, corn, tomatoes, cilantro, taco seasoning. Simmer for about 15-20 minutes.

In a skillet add a thin layer of oil. Fry tortillas, folding in half, for crunchy tacos. Fill tortillas with cooked filling add cheese, and other toppings.
