  • 4 Flour tortillas cut into strips
  • 1 can enchilada sauce
  • 1/2 can fire roasted green chiles
  • 1/4 to 1/3 can corn (or 1 ear)
  • 3/4 cup grated cheddar cheese
  • 3/4 cup grated pepper jack
  • 1 can cooked chicken
  • 1/2 tsp cumin
  • 1/4 tsp oregano
  • dash cayenne
  • 1 Tbsp hot sauce
Preheat oven to 350 degrees

In a skillet saute chicken (shredded), green chiles, corn, hot sauce, seasonings for about 5 minutes over medium heat.

Spray 4x8 baking pan with non-stick spray
Coat bottom of pan with enchilada sauce and an initial layer of tortilla strips

Top with remaining tortilla strips and a sprinkle of cheese

Bake 20 minutes
Serves 2-4
