Pumpkin Spice Muffins

Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 can pumpkin puree (not pumpkin pie filling)
  • 1/3 cup olive oil
  • 2 large eggs
  • 1 1/4 cups of sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp spice mix
  • Spice Mix
  • Equal parts of cinnamon, nutmeg, cloves, ginger, and allspice (If you use 1/4 tsp each you end up with just over 1 tsp total)
  • Topping
  • 1 tbsp sugar
  • 1 tsp cinnamon
Directions:
Preheat oven to 350F

Whisk together pumpkin puree, oil, eggs, spice mix, sugar, baking powder, and salt in a large bowl until smooth, then whisk in flour and baking soda until just combined.

Put muffin cups into muffin pan(s). Fill muffin cups 3/4 full. (Fills 12 standard or about 36 mini muffins)

Stir together topping ingredients (cinnamon and sugar) in another bowl, and sprinkle on top of each muffin.

Bake until puffed and golden brown and a wooden toothpick inserted into center of a muffin comes out clean, about 25 to 30 minutes. (same time for mini-muffins)
