Enchilada Bake

Ingredients:
- 4 Flour tortillas cut into strips
- 1 can enchilada sauce
- 1/2 can fire roasted green chiles
- 1/4 to 1/3 can corn (or 1 ear)
- 3/4 cup grated cheddar cheese
- 3/4 cup grated pepper jack
- 1 can cooked chicken
- 1/2 tsp cumin
- 1/4 tsp oregano
- dash cayenne
- 1 Tbsp hot sauce
Directions:
Preheat oven to 350 degrees
In a skillet saute chicken (shredded), green chiles, corn, hot sauce, seasonings for about 5 minutes over medium heat.
Spray 4x8 baking pan with non-stick spray
Coat bottom of pan with enchilada sauce and an initial layer of tortilla strips
Layer:
cheese
chicken mixture
tortilla strips
sauce
Top with remaining tortilla strips and a sprinkle of cheese
Bake 20 minutes
