Twice Baked Potatoes

Ingredients:
  • 4 medium potatoes
  • Milk
  • Butter
  • 2 Tbsp sour cream
  • 1 green onion
  • salt and pepper
  • grated cheddar cheese
  • paprika
Directions:
Wash potatoes and pierce with fork. Bake at 400 degrees for 1 hour to 1-1/2 hours (until potato is tender when you stick a fork in).

Cool potatoes at least 20 min.

Cut each potato in half. Scoop out potato from skin carefully, leaving skin in tact. Mix some milk, butter, sour cream, green onion, salt and pepper with potatoes. Mash until creamy consistency adding more butter or milk if as needed.

Fill each potato skin half with mashed potato mixture. Sprinkle with cheddar cheese and a dash of paprika.

Bake for 20 minutes at 30 degrees.
