Wonton Soup

  • 1 tbsp garlic, minced
  • 1 tbsp fresh ginger, finely chopped
  • 1/4 cup sliced green onions (about 2 inch pieces)
  • 4 oz fresh spinach
  • 1/2 lb BBQ pork, sliced thinly
  • 10 cups chicken broth
  • 30 Wonton wrappers
  • 1/2 lb ground prok
  • 1 tsp garlic, minced
  • 1 tbsp fresh ginger, finely chopped
  • 3 tbsp green onion, finely chopped
  • 1 egg yolk
  • 2 tsp soy sauce
  • 1 1/2 tsp rice wine vinegar
  • 1/2 tsp sesame oil
  • 1/4 tsp crushed red pepper (optional)
Saute 1 tbsp garlic, 1 tbsp ginger in1 tbsp oil until fragrant - about 1-2 min. Add 1/4 cup sliced green onions and chicken broth and bring to a boil. Reduce heat to medium low so that the broth just simmers. Allow broth to simmer for 20 - 30 min while assembling wontons.

In a small bowl combine wonton filling. Mix until thoughoughly combined.

Fill a bowl with cool water and set aside. Lay out a piece of aluminum foil to work on. Place a few wonton wrappers on foil. Place 1 heaping teaspoon of filling in the center of each wrapper. Wet the remaining surface area of wrapper with water. Bring the 2 opposite corners together to form a triangle and enclose the filling. Press out any air and seal. Moisten the opposite corners of the long side and bring together. Overlap slightly and press the edges to seal. You should now have a rounded wonton with a triangle poking up from the top.

Set aside assembled wontons - not touching each other.

Add spinach, BBQ pork to the broth and cook for 5 - 10 minutes. Add the wontons to the soup. Cook until the wontons float and the prok filling is cooked through - about 5-10 min.

You can add other things to the broth like bamboo shoots, bok choy, mushroom, etc.

If you plan on saving some soup as leftovers then cook wontons in a separate pot of boiling water before adding to soup. Otherwise the cornstarch on wonton wrappers will turn the soup a cloudy/starchy color when re-heated.
