Pecan Puffs

Ingredients:
  • 1 cup pecans
  • 1 cup cake flour
  • 1/2 cup butter
  • 2 tbsp sugar
  • 1 tsp vanilla
  • Powdered sugar
Directions:
Beat butter until soft and fluffy.
Add and blend sugar and vanilla.
Grind 1 cup of pecans.
Add pecans and cake flour and beat/mix well.

Roll into balls and place on greased baking/cookie sheet.

Bake at 300 degrees for 30 min.

Let cool at least 15 min, then roll in powdered sugar.

Similar to Mexican Wedding Cakes or Russian Teacakes

If cookies flatten/melt while baking increase temp to 325 degrees and bake for 20 min.

Allow to cool slighlty before coating in powdered sugar or they may explode, but make sure to coat while still warm.
