Spinach Lasagna

Ingredients:
  • 1 package lasagna noodles
  • 8 oz Ricotta cheese
  • 1/2 cup grated romano or parmesean cheese
  • 1 1/2 cup grated mozerella cheese
  • 1 package fresh spinach leaves
  • 1/2 purple onion
  • 2-3 cloves garlic
  • 1 1/2 batch of Spicy Pepper Pasta Sauce (See recipe - leave out peppers for mild lasagna)
Directions:
Cook Lasagna noodles according to package directions - noodles should be stifer than spaghetti when done.

Chop onion and garlic. Saute in oil for about 1-2 minutes. Add spinach and a few tbsp of water and cook until spinach is done - about 5-10 minutes.

Spray a casserole dish with non-stick cooking spray.

Pour a small amount of sauce to just cover bottom of dish.

Place one layer of lasagna noodles (usually 3 noodles).

For each layer:
On top of noodles spread a layer of sauce.
Spread a thin layer of cooked spinach mixture.
Sprinkle a layer of mozerella cheese.
Dust with parmesean cheese.
Add small clumps/dollops of ricotta cheese across layer.
Add noodles to begin next layer.

Repeat for each layer

On top of whole lasagna add remaning sauce to top layer of noodles. Add a light sprinkle of ricotta and mozerella cheese.

Cook at 350 degrees for 30 minutes.
