Pork Chow Mein

Ingredients:
- 1 lb BBQ Pork, cut into smallish pieces
- Carrot
- Bean Sprouts
- Snap Peas
- Snow Peas
- Bok Choy
- 4-5 Green Onion
- 1 pkg Cooked Chow Mein Noodles (Lucky brand is good)
- 3 eggs
- garlic
- 6 tbsp Oyster Sauce
- 3 tbsp Soy Sauce
- 3 tbsp Chili Paste
- 4 tsp Vinegar
- 3 tbsp Black Bean Garlic Sauce (Lee Kum Kee is a good brand)
Directions:
Chop green onion, garlic.
Scramble eggs, garlic, green onion, salt, pepper together. Pour into pan/wok and swirl to coat pan evenly. Cook about 1-2 min - until bottom is cooked, then flip very carefully and cook 1 more min (should look like a crepe).
Cut egg crepe into thin strips and set aside.
Boil noodles about 5-6 minutes. Drain and set aside.
Cut bok choy, carrots and green onion into smaller pieces. Remove ends from snow peas.
Stir Fry bok choy, carrot, bean sprout, green onion, snow pea, snap pea.
Add BBQ pork, noodles, sliced egg, and sauce ingredients to stir fried veggies.
Stir until sauce is mixed in well and cook for 5-10 minutes until heated through.
